I love summer for many reasons, but one of them is certainly the assortment of fresh fruits that are available during these warm, sunny months. I love pineapples, but typically don’t buy them whole (pre-cut speaks to the lazy side of me!) BUT, a few days ago, I decided to bring a few pineapple friends back home with me and I spent the day making not only one but THREE tasty pineapple treats that is sure to tantalize your taste buds. I’ll be sharing the three recipes over the course of the next couple of weeks – first up is a simple yet tasty smoothie that is good enough for breakfast, lunch, or a refreshing afternoon pick me up!

What You Will Need:
- Fresh Pineapple
- Bananas
- Fresh Mint Leaves
- Milk (you can use any type of milk you like)
- A blender (I actually used my large size Magic Bullet)
- Optional: a scoop of ice-cream if you want a super treat!
Directions:
For one serving, cut up a quarter of the pineapple into bite size chunks toss into the blender cup. Add a whole banana (split into smaller pieces), a few mint leaves, and add 1 1/2 cup of milk. Blend all items together until a smooth, creamy consistency is achieved (about 20-30 seconds). I opted for less milk and add a half a scoop of mango ice-cream! Garnish with some fresh pineapples and mint leaves on top, and YUMMO!
TIP: If you want you to serve your treat cold, put your fruits in the fridge prior to preparing, no ice will be needed!
