To help you get through the start of the week, I’ve got a cheeky and fun recipe I’d love to share with you. I mentioned in my recent smoothie post that I’ve been playing around with pineapples, I know you’ve all tried a banana split, but how about a Pineapple Split? This creation was inspired by my new favourite food magazine – Ricardo. Trust me the photos are drool-worthy so I urge you to pick up the latest Summer Issue!
Summer is all about fun and colour. This easy, peasy Pineapple Split is a sure crowd pleaser for the young and old!

Ingredients:
- One whole pineapple
- Your favourite ice-cream (I used PC Mango ice cream)
- Mint leaves for garnish
Step by Step:
1. Carefully split the pineapple in half by cutting down the middle vertically. / 2. To create the pineapple shell, run a paring knife around the inside of the pineapple, about a 1/4 inch inside the skin, then score the pineapple in a grid like pattern. / 3. Using a spoon, scoop out the insides of the pineapple and set aside (these should be small cubes) / 4. Arrange the pineapple cubes as one layer to line the bottom of the pineapple shell. / 5. Scoop in your favourite ice cream (I used PC Mango ice cream) in each half / 6. Garnish with mint leaves and serve!
