It’s Easter and that means I’ve got plenty of mini eggs stashed around the house. Instead of stuffing my face with them, these little pastel goodies inspired me to incorporate them in an Easter themed dessert that is sure to impress.
Whether you’re hosting a simple brunch of elaborate dinner this Easter Sunday, greet your family and friends with these extremely simple Easter Meringue Nests! I used some fabulous new PC products from the latest PC Insiders Collection to give me a hand which required no baking/cooking and only a few minutes to prep and assemble. I also used yogurt as the filling for a healthier alternative (bonus!).

What You Will Need:
- 1 package PC Meringue Nests
- 1 container PC Strawberry Skyr Iceland Yogurt
- 4-5 strawberries
- mini chocolate eggs
I used yogurt as my filling but you can swap for more decadent options such as whipped cream or custard. The PC Skyr Iceland Yogurt (it is also fat-free and lactose-free) has a thick texture which is great as a filling. If you prefer, you can also blend your favourite fruits into a plain yogurt to create your own flavour!
Simply decorate with diced strawberries (or any other fruits) and chocolate eggs for the perfect Easter themed treat!

I make smoothies and other beverages throughout the year, not just on certain seasons or events. I look forward to getting another hydrangea plant as last year’s from Home Depot was dry that no matter how much I took care of it, it eventually dried up when the weather became hotter. Plants are natural air purifiers, can add calmness to you and also perk you up with its appearance.

Yum! These look delicious! With spring around the corner, a perfect treat would be a bright yellow lemon curd. Goes great with angel food cake, pound cake, and these meringue nests I think!
