Apple pie and oatmeal. Two of my favourite comfort food items, especially during these colder months. I’m always looking for fun and delicious ways to dress up a bowl of healthy oatmeal and the other day, while I was craving for a warm apple pie after dinner, it dawned on me that I can curb my dessert cravings in the morning, by combining these two delicious items! I had plenty of apples in the kitchen and luckily I also had all the ingredients needed for the apple pie filling already tucked away in the pantry – the stars were aligned!

What You Will Need:
- 3 Medium apples, sliced
- 1 tbsp Lemon juice
- 1 tbsp Maple syrup
- 2 tbsp Light brown sugar
- 1 tbsp All-purpose flour
- 1 tsp Cinnamon
For Oatmeal (individual serving)
- 1/2 cup oats or steel oats
- 1/2 cup milk, I love using coconut milk

For Apple Pie Filling

- Slice apples into small pieces and squeeze a lemon over top and stir to combine.
- Add brown sugar, flour, maple syrup and cinnamon over top of apples. Stir to mix ingredients.
- Heat apples on the stove over medium heat for 15-20 minutes until soft. Stir occasionally. You want the apples to be soft. Set aside and allow to cool, refrigerating if necessary.
For Oatmeal
- Heat oats and milk over stove top or microwave on high for 1 minute
- Scope in desired amount of warm apple pie filling and voila!
I love pre-filling mason jars with dry oats ahead of time and in the morning all I have to do is pour in milk, add a spoonful of chilled apple pie filling and pop it into the microwave for an easy peasy yet delicious weekday breakfast. I’ve also tried with overnight oats and leaving the apple pie filling chilled, it’s also a great option and very refreshing!
