On the weekends, I tend to go all out when it comes to breakfast/brunch – think bacon, eggs, pancakes, fried chicken and waffles (don’t judge), fancy brunch spot concoctions, you know, the whole nine yards. But during the work week, I need something that is simple and quick to assemble, but without having to compromise my level of satisfaction, both in taste and quantity.
Oatmeal is my go-to and it’s super good for you! I love that it is extremely versatile and can be enjoyed cold or hot and sweet or savoury. Inspired by the cozy Fall weather, I prepared this Warm Apple Pumpkin Spiced Coconut Oatmeal and have been literally eating it several times weekly!
This oatmeal recipe only takes a few minutes to make, read further to see how!
What You Will Need (for one serving):
- 1/2 rolled oats
- 1/2 cup coconut milk or coconut creamer
- Splash of water
- Assorted nuts – I used chopped walnuts, pumpkin seeds, and almond slivers
- Hungry Buddha Coconut Chips in Pumpkin Spiced (seasonable and SO delicious)
- Pure Maple Syrup
- Half an apple, sliced or diced
Steps:
Mix rolled oats with coconut milk and a splash of water in a microwave safe bowl / Microwave for 1 minute on high / Mix to desire consistency adding more water or milk if you find it too thick / combine toppings / Sprinkle on top / Add apples / Top with Pumpkin Spiced Coconut Chips / Drizzle with syrup and ENJOY!
Note: This can also be prepared over the stove if you want to swap out the microwave option!
This recipe can also be prepared ahead of time as overnight oats. When stored in tightly sealed mason jars, they are the perfect companion for your morning at the office.
