Hello! Sad to say, but we’re approaching the last bit of summer. As much as I love Fall, the hot, Summer season is still my favourite of all. We get such a short summer in Toronto which to me, makes it that much more special. Though we may be saying good-bye to the hot summery weather soon, but there’s still plenty of time for refreshing, cool treats!
Over the past weekend, I made a few of these Peach and Coconut frozen treats, it was perfect after our bike ride Sunday afternoon.
I luckily already had all the ingredients (a big whopping three ingredients), so these were super effortless and incredibly tasty. I want to say a special thanks to Loblaws for sending me home with a batch of tasty peaches from our #NEARYOU dinner party a week ago and ZICO Canada for surprising me with this set of popsicle maker via Instagram!
What you need:
- Popsicle Maker/Molds
- Handheld blender/food processor
- One can of coconut milk
- 5-6 ripe peaches
- Optional: Black Label Blackberry Syrup

Step 1: Prepare Peaches
Wash, Dry, and Chop the peaches into small cubes.
Step 2: Create Mixture
Shake your can of coconut milk well and pour into a mixing bowl. Taking most of your peaches, leaving a handful behind, blend into a puree texture using a hand blender or a food processor. Pour into coconut milk and stir well. I didn’t add any other sugars into the mixture. I found that the natural sweetness from the peaches was just enough. However, if you want them extra sweet, use agave or natural honey to sweeten.
Step 3: Pour into Molds
Pour mixture into popsicle molds and account for a little bit of free space in each for the left over peach cubes (remember you set some aside!). Divide up the leftover peach cubes and insert them into each mold for added texture. Freeze for a minimum of 6 hours in your freezer.
Optional:
When ready to serve, drizzle your favourite fruit syrup for some added sweetness. I used the PC Black Label Blackberry Syrup and it was oh so yum!
I hope you’ll give this a try and enjoy some frozen treats during your last days of summer! However, these are delightful all year round!
